I read through the last several threads and I completely understand that skiing/snowboarding is a gravity sport and flatter areas mean less speed. Free roam on the mountains is no problem, but events and slopestyle...NEVER enough speed. On the Fochi course, I have to skip jump #1 just to hit the next two with any speed. If there is a way to fix this for park/slopestyle situations, I would be all for it. It's extremely difficult to enjoy the game when you're casing every jump.
2. Grabs
Again, I get it without motion capturing it makes it very difficult to realistically depict grabs. It seems that there are just a very limited amount of grabs, perhaps it's user error. While not a perfect game, Amped 2, had a very good grasp on their grabs. Seems like there is a lot of room for improvement here. Mo-capturing, more devs, bigger budget, I get it.
3. Snow shading/texturing
This is my biggest complaint. When I'm shredding down the South Piste, I get snowblind. I can't see bumps, mounds, jumps, etc...it's awful. Texturing would definitely help here. I get going for realism but I don't play video games to get blinded by white voids that I'm currently skiing on.

And thank you for your feedback - we're making this game for this community and will keep tweaking and trying new things until we get it right. As you said, software development isn't easy but hopefully by now everyone can see that we're not giving up easily.
To your points..
Fochi is probably the worst course we have. We made it super early on and our artists did their best to guess the features based on the photos we saw from the course. The scale is totally off and we never had a chance to update it with new assets so it doesn't play great. Have you tried the X Games course? There we worked directly from the 3D model ESPN sent us which resulted in a much faster and smoother course.
We test each park/course to make sure you have enough speed. Some are easier (/less punishing) than others but overall as long as you're not stopping in between features, you should be landing over the knuckle.
Limited grabs? There are 8 grabs for the left / right hand and another 8 for 2 handed grabs. Then you can tweak most of the single-hand grabs as well. We eventually want to let you customize what grabs you ride with, but for now we think that 16-24 grabs is pretty good!
We're constantly trying to make the lighting/textures better so that you don't get snowblind. I know it can be an issue. In single player, you can tweak the time of day with Dpad Right and position the sun so you have more contrast. I know, that's not a great excuse... our artists are looking into ways to solve this issue. The snow and environment are very detailed, but it comes down to how everything works together in the end - we'll figure it out eventually!
