Is there any way to delete text messages beyond recovery?

it took me an upsettingly long time to realize what this meant.

If you have allready sent the text then no, until both phones and service provider decide to overwrite the files (all three would need to).

There is however available software that will use an 'expiring' encryption key to send a message. One the key 'expires' the message could still be found, however someone would need to decrypt it. How long that would take would depend on the complexity of the code used and the resources available to crack it. Most codes currently used would take a standard computer over a lifetime to decrypt.
None of this would stop someone recording your message and saving it using another media
