preface: I've never been to china but have done extensive traveling with camera throughout europe.
In my opinion, China is not the kind of place i would bring a tripod and intervalometer. I'm sure you could come up with some really creative stuff, and if thats your shooting style and you really want to, then go for it. however, when im in big cities and places where the people and the lifestyle are the focus/attraction, i tend to go light/documentary oriented.
I would bring: body, any extras (batteries, cards, charger) 50 mm, computer, and the kit lens or a wide prime if you wanted to spring for it. I would buy a 24 or maybe 18? depending on your style. You will thank yourself for not trying to haul everything around china, and *most importantly* you will be able to focus on the awesome place you're in instead of sherpa-ing loads of gear and fiddling with it.
Dont bring a sequence bag unless its going to be your only backpack. even then, its not really made for shooting while moving/traveling, since you have to take the bag off to access it, and the backcountry/skiing features of the bag only add weight and hassle. Buy a domke messenger bag or something similar that you can easily access while walking. The little ones kind of look like purses, but there are a few different brands that make really usable bags that don't look so obvious.
