I know that some of the shots that were really wobbly were also stabilized in post because the guy filmed from the back of a truck and yeah there was definite jello in a few shots
It actually wasn't jello that you were noticing so much in some of those shots, it was the program's stabilization filter (looked a lot like Smoothcam in FCP). It has such a hard time smoothing the shot out because it doesn't react well to jello effect, even if subtle, but what you were seeing was the program itself tweaking out, not the jello as much.
