I live on the east coast and was in your shoes last year deciding between park and pow. I originally bought some K2 EXT's thinking it would be a good east coast ski that could do a little bit of fresh out west when I went there. I took my k2's to Utah and was happy with how they performed on groomers, but once you get off the trail I immediately noticed I lost a lot of my maneuverability.
I came back and reluctantly decided to buy another pair of skis, wanting some fatter ones. I decided on some Armada JJ's as I had heard great things about their ability to ski all conditions. I took them out on the east, they were a blast. Took them out west and had even more fun.
Long story short: With the advancement in ski technologies, such as rocker and 5-dimension skis, I'd suggest going with a fatter ski that is designed for all-mountian.
JJ's
CRJ's
ON3P Caylors or Billy Goats
And I'm sure there are more.
