to be honest i rarely cook with cinnamon. in my opinion it's too recognizable of a spice and doesn't mesh well with fruity/citrus flavors.
the recipe i make does have a pinch of nutmeg in it, but since most people on NS don't know what a true pinch is i decided to not add it on the instructions and risk ruining the meal for the maybe one person who would try my delicious breakfast delight. haha
Cilantro-lime chicken fajitas: makes 12 small fajitas
12 small (6") corn torillas
1 c. cilantro
1/2 c. olive oil
1/2 c. lime juice
pinch chili pepper
2 cloves are garlic smashed to a paste with salt.
^blend all together in food processor. (minus the tortillas)
trim 3 chicken breasts and pour about 2/3 of the marinade that you just blended up over the breasts in a glass baking dish. poke small holes in said breasts with fork or knife to allow the marinade to soak in and flavor the chicken. put in fridge for 1-2 hours.
grill chicken and veggies (bell peppers, onion, and serrano chilies) on the BBQ for about 8 minutes total or until done. chop or pull chicken, pour over the remaining marinade, stuff in soft shell tortilla and you're done! super easy and delicious meal. add sour cream, guacamole or hot sauce if desired.
