I'm looking at building a computer, these are the parts i'm looking at.

sounds like a really good build man! I wish I could have gotten the i7 2600k when i built my pc. Only thing I'd suggest is a samsung spinpoint f3 1tb hd x2 instead of one 2tb drive. that way you can use one as a backup and one as a regular drive instead of storing 2tb's of info on one drive and having it crash. everything else looks solid!
if you want to game, buy a better graphics card.
I would recommend the gtx 560 ti.
And here's a tutorial how to build one (if you need it). Build it parallel to it and everythig will work fine.

Your graphics card isn't compatible with your motherboard. Your motherboard is a Crossfire board, and you have an SLI card. I would just go with the Radeon HD 6970 card.
Yeah, it's a great card. Another thought it to just change your motherboard. I haven't looked at hardware prices in a while, but if you can find a similar board that has an SLI chipset, then you can keep the nVidia card. I personally prefer SLI over Crossfire, but it seems that you don't really mind either way.
If you want the best, then go with the Radeon HD 6990, but it's quite pricey at $700...
'GP' = 'Green Power'. They are slower 5XXX RPM drives, the faster
drivers are 7200RPM (or even higher for WD raptors). 'AV' drives are
made to be used 24/7, so they cost extra. Just get a caviar black, or a
hitachi 7K100, or caviar blue.
And, you can run an SLI card on a crossfire i'm pretty sure,
