The pro is better, but its the components (as in its more powerful). If you aren't doing anything to take advantage of it then yeah you're not going to notice it. Not sure what you were expecting to happen, haha.
Anyway, as far as programs,
http://www.mactricksandtips.com/2008/01/top-100-essential-mac-applications.html that list has it pretty well covered. Since I got mine, the ones I have been most glad I got and used the most are:
Fire Fox (3.6, I hate 4)
Handbrake (Extremely handing for converting video files)
VLC (This one is an absolute necessity)
GfxCardStatus (Not sure if this is on that list but its handy, especially since the graphics card switching does seem to be finicky sometimes)
Geektool (Super fun to mess around with, it can make your desktop awesome with a bit of effort)
Coconut Battery (Only really does one thing, but it does it well. I only check it occasionally out of curiosity, it gives you a run down of your batteries lifetime)
There is a shit ton of good apps for Macs out there, you'll come across them over time.
