If you must center mount, get a symmetrical ski, and if you don't center mounting a non-symmetrical ski is gonna make them ski worse everywhere but the park (esp. in pow). From the way u describe urself i would get the K2 revival or the Volkl Bridge, and mount either of them about -2.5 to -3.5 from true center. the revival is 90 underfoot, with tip and tail rocker, and fairly stiff. It carves surprisingly well, and will handle almost any snow condition well. The bridge is 95 underfoot, not quite as stiff as the revival, not quite as poopy, but will be more playful in pow, and handle deeper snow better than the revival.
I must reiterate that since u said that u want something that will be good everywhere, center mounting is not a very good idea.
