Word, lasagna noodles are what got me started.
I use a mechanical pasta press, what are you using?
Also what are you using for flour? I use mostly semolina and some bread flour.

if your pasta is crunchy then it is just undercooked, al dente is not crunchy

Actually different regions of Italy cook their pasta differently. One set of my grandparents are from Sicily and cook their pasta al dente and my other set are from Calabria and they think pasta cooked al dente is gross.

How are you making your flour? I like wheat for my flour, but sometimes it's nice to throw in some chestnut. Also, do you use a hand grinding stone, or did you splurge on an automatic?

I work in a pasta bar currently, and people who tell me to cook their pasta double the time, I just want to smack their heads on the counter. Hooray for al dente.
