I grew up in Colorado and haven't gone to either of the schools but some of my close friends have. I have also been to Utah numerous times (skiing etc.)
Colorado:
As someone said before Gunnison about 20F cooler than the rest of the state.
It's also known as "wasted state" (def. not the strongest school in CO)
Crested Butte is about 30 minutes away and has some sick skiing
you won't have to deal with the crazy 1-70 traffic (unless you go to those resorts further north)

Utah:
My friend felt like he got a good education at Westminster
Another friend dropped out because he was started to ski so much
U of U has a very strong biology and engineering program plus a good business school
They both said that there were Mormons, but their influence wasn't as strong as they though it would be. (there are 'cool' mormons too)
People are down to ski
Brighton, Solitude, Alta/Bird all about 30 minutes (better than Crested Butte, my opinion). Park City is also not a far drive. Plus many other resorts in close proximity.

So this is what I have been told.
Don't be like me and choose to go to school in NY.
As for jobs afterwards, It's all about connections. Do something in school to set yourself apart.
Utah gets way more snow than CO.
