Don' t be intimidated by the 181s....
The Jeronimo is one of the most intuitive skies I have ever ridden. The generalized-do-everything design does just that...everything... they will make you a better skier.
In addition they have a bit of rocker (in addition to camber) so they will feel a little shorter. They have the best of contemporary all mountain shapes...I my humble opinion of course.

If you got the cash, and wish to support a small American company, not to mention many of the guys in the NS community, don' t hesitate.
I have alot of love for On3p, but I should mention an alternative in case you want one.....oh god save me here it comes the Minions of On3p will come to collect my soul... Checkout the Moment Tahoe. It is also from a quality company and has a reputation as an excellent all mountain ski. It lacks the rocker and bamboo core of the Jeronimo, but at your weight and skill level I am not sure you will care...
Personally the Jeronimo 181 was the choice for me....and if they made them in a 186 or a 190 I would have not hesitated to size up....You will not be sorry if you choose the 181
As for bindings get some PX 14 they will probably hit your price point and will serve you for years to come, because you will fall in love with skiing all over again. Welcome back my friend....
P.S as for boots go see a bootfitter, he will check out your foot and get you an appropriate model...don't go too cheap on the boot, because it will ruin your experience no matter what skis you decide to buy.
