Editing Video with Flat Light Issues

Most of my video comes from my GoPro, and making edits with flat light is baffling me. I'm just not sure how to optimize the shots so the quality isn't destroyed but the shots don't look too boring and grey. Has anyone found some good fixes?
Also, on a sort of related note....when you make edits with both sunny and flat light shots, how do you optimize the video so that they meld together without too much distraction?
Any tips on what to play with would be sweet, the only decent results I've gotten have come from toying with contrast a bit.

If its all flat light, you could make them black and white and play with the hues to get a better contrast in your shots.

So lower saturation to 0 to go black and white, then raise red, green, and blue hues to get the right color in my skis/outerwear and such? That's the only way I could think of doing that, I'm a beginner at this stuff.

Well, there wont be any color, it will be black and white. When you play with hues while the image is desaturated, the tint and hue will change what shades of color each color is in the black and white image, see what im saying? So you can make the shadows more distinct vs the snow.
