How to cook deer heart?

I've heard it's tasty as fuck when cooked properly, but I can't find any recipes online. Any of the more outdoorsy members on here know how to cook it so it doesn't come out rubbery?

My Mom said it would come out rubbery. She's tried it before apparently. I'm assuming a roast of some sort would work. Just donno the specifics.
