I'm almost your exact same size, and boot size (a little heavier). Yes, I ski with a good bit higher DIN, but I'm more of an aggressive big mountain skier, and old school bump skier. I often set my DINs per conditions (I don't recommend this unless you have a lot of experience with it)
In general, you want to ski with as low DIN as you can. DIN isn't a penis measuring contest by any means, anyone who insinuates differently is a fucktard.
Being a level 2 skier I doubt you will be on any sketchy terrain where a pre-release would mean doom, thus stick with your shop settings and see if you pre release. If you are releasing a ton, and almost everytime, you are 100% sure you were skiing fine and your ski just fell off, or you "stepped out" (you will understand the feeling after you have done it a few times). Then think about raising it. If you do raise it, only a HALF DIN at a time. Up it half and try the experiment again.
When I get a new binding, they all release a little different. I spend about 2-3 hours dialing it in. I basically find a good consistent bump run, start the DIN low, and crank a half DIN at a time, as I whack down the exact same line everytime, until I feel comfortable where the pre release is,.
