Its good that you are using manual. but it looks to me that you have exposed for the background not the skier.
your angles are typical for skiing photography, but thats all you can get with your lens. so try to be very creative with the setting/venue and the sun. use everything you can in your picture, not just the skier. If the clouds are cool, use them, if you can frame the skier with the trees or the bamboo sticks. whatever use the area around you. dont have your face on the back of the camera to much. the less time you spend looking at your camera the more time you have looking around and finding cool angles.. oh and watch the background, you dont want a black coat on dark trees put them on the sky. use everything you can. keep it up!
Oh and look for a strobe. (light) get a speedlight this will be your next step. (IMO)
