I have: either a pulled pork sandwich and some fruit, followed by a Guinness on the lift (throw it away at the top trash can)

couple days ago i had a bagel with peanut butter, raisin bran cereal w/1% milk, and a glass of oj....felt so good during the day. kept me goin for a while.
but you should probably take into consideration the time between eating and skiing. i think i started skiing about an hour and a half-2hours after eating....you wouldnt wanna eat a big meal then go ski obviously.
