This has to do with the flex of my boots. I am 6'4" 195lbs and am riding solly X-Wave 7's which have a 80 flex. I ride like 80% all mountain 20% park and normally charge pretty hard off piste. My foot just grew an extra 1/2 size in the three years since i got my boots, so i will be getting some new ones this summer. I think i want something stiffer, but i don't know how much stiffer should i go?
How would a 110 flex change my skiing experience versus just staying at a 80-90 flex?
I also ride stiff skis, not noodley park skis.

Generally speaking, I would recommend getting a boot at least around
100-120 for a guy your size as well as trying to drive a stiffer ski.
Choosing an appropriate boot flex is semi based on your weight/height/flexibility and semi
based on your personal preference. If you are used to that X-Wave 7, the newer Impact 8 or 10 will deliver you a much more supportive, responsive and efficient skiing experience. Plus, you can always start with a stiffer boot and have it softened to your exact liking. You can stiffen a softer boot, but it's not as fine-tunable of a process.

i would say 110 at the least.
your a big kid, no doubt, and you are skiing a lot of all mountain.
I would look into a 120+ flex boot. it will be much better for all mountain at your size. im in tecnica agent 110s and im 5'9 170
