My comments on SLC:
The grid system, easy to navigate once you figure it out, but it's on the confusing side.
It's actually more diverse than people give it credit for, it's Democratic as far as politics go, there's a large university and medical school, a decent sized GLBT population, you can get some outstanding Mexican food (Red Iguana) and a nice bowl of pho noodles as well.
There is of course the Mormon influence, but despite my gripes with the church's stand on social issues, my personal interactions with Mormons have been civil.
The skiing of course has been described in ample detail.
For the OP, I'll give a plug for PDX. It remains an 'under the radar' city, compared to Seattle and Vancouver, but the restaurants are reputed to be fantastic, the beer and coffee are world-renowned, and it's got oodles of personality and weirdness.
Plus, one of my favorite aspects is the constant presence of volcanoes. On a very clear day, you can see from Mt. Rainier to Mt. Jefferson, yup that's right, you've got views of Rainier, Adams, St. Helens, Hood, and Jefferson visible from town. That's a 200 mile line of mountains. Simply amazing.
