Well if your up to a big challenge try eddie van halens Eruption, hard as hell but the tapping is soooooooo fun, also November rain is pretty easy except the last solo is kinda hard if you aren't used to playing fast but its very doable.

I really hate to double post but Soothsayer by Buckethead hands down most fun song I have ever learned to play. Also Mr Brownstone is another cool song thats not terribly hard.
