chopped up takes out EPs and Bents, being 6'4" takes out Chetlers and JJs IMO, they both measure 183, and Night Trains could be good but very hard to get at a discount. That leaves 189 LL2s, which as the guy above me said CAN ski short, but plenty of people on TGR ski them hard and some bigger guys over 200lbs still say they are stable at speed, and you are able to make long turns if you want. All skis with a good amount of rocker ski shorter when than length implies, which is great IMO, because that means you can ski them short in trees but almost all of them you can ski long as well when it opens up. At about 6'1" and barely under your weight I skied Chetlers and found them fun and like someone else said it feels like you are getting shot through a slingshot when making hard turns, which is very cool. I also found them too short for hard skiing w/cliffs which kept me from buying them. I haven't gotten to ski them but got 189 LL2s after going through the exact same skis you are not. They aren't 2 by 4s but are plenty stiff and have more rocker than all the skis you named except maby EPs(I think mrstskier has a pic of the rockers side by side of the two in his profile).
