word. it works according to the opponent process theory of vision. when you see those two colors and concentrate on them, the "burn in" to your retina. when it changes to black and white, your eyes see the remains of the color, but in almost a photographic negative.

your eyes have habituated the inverse colors, when removed, instead of returning to neutral, the opponent colors seem activated hence painting the b/w with color, when you get distracted, you're eye movements lose the habituation, and the perception of color is lost
