It was the same way for me. Its overwhelming and my dad was always yelling and swearing and you're thinking how will I ever learn this but eventually you do and it becomes 2nd nature.
Don't be afraid to give it more gas.

Practice getting the car moving with NO gas, just by using the clutch. That should give you a good feel of how the clutch engages. That's the only tip I got, it just takes practice and soon it will be second nature.
If you slip the clutch properly just the idle of the engine will be enough to get moving.
I can do it in my 91 golf, it's not a computer chip. But yeah you have to let it out very slow, and not let it stall.
