Replying to Beginner, need skis, need tips!

As it says im a beginner to skiing, used to be able to ski a bit (that means just able to parallel) broke arm, never could make the effort to start again (live in UK- dryslopes....)
Want to get back into skiing and i have the dedication to advance as fast as i can possibly manage. Im wanting to get some twin tips once im up to a decent standard so was just wondering which skis would you recommend out of (im about 5'11 if not a little more and 70kg/11stone):

thats all without bindings, my friend has a pair but about 2-3 years old- should they ok, do i just check their DIN settings?
im guessing ill be skiing park, piste and off piste.
Also any help on getting started and building up technique etc (good parallel skiing, advanced turns eventually, riding switch etc)
