Mounting ski's

i've always wondered what the difference is between mounting your ski's center mount ( as in true center ) or 1-2 cm back like what people at my ski hill are doing. could anyone educate me on this?

Depending on the ski but mostly, centre will be better for spinning in the air and switch riding.... But 1-2cm back will improve the all mountain ride.
