I have never done it but i've heard that you can. The only problem is your din window (with the little numbers) will not actually represent the setting that you are at. But I would figure (ie don't know shit for sure) that if the 10s and 14s have the same range then you could just add 'x' to number reading in the window to get your din. Even if that didn't work you could always just torque test it to the right setting. No matter what you should get it tested before you use it though. Binding springs aren't magical things they are just regular old springs and work pretty much like you'd expect. Ask around and search. Tons of people have converted 920s to 916s by removing the extra spring. I remember a while ago some parent on some form or another cut down 916 springs so their little badass could ride an all metal binding w/ an appropriate din range.

I knew there would be a problem with the din window. If the springs tighten proportionatly to one an other you could get a very good idea of the din reading.

You can probably replace your toe spring without much difficulty. The din windows on the toepieces are actually interchangeable with those bindings, you just might have a hard time removing them without breaking the window. Your easiest option for the toe is just to remember where in the 14 din window your setting is, and just match it in the 10 din window, ignoring the numbers.

I have never had any luck deconstructing the heel of that binding, so I would stick with your #of turns solution.

But, like said above, definetly get the binding tested with a torque meter.

Funny related story: Years and years ago I had a pair of rossi FD80 bindings that had a din of 10, so I removed the toe spring, put a half dozen washers in, then put the spring back in and compressed it a bunch to increase the din past 10. (this is highly NOT reccomended). It worked ok but not great. Those skis ended up sitting in my parents crawlspace for years, and I recently went down there to find that the toe piece had spontaniously exploded into a couple dozen pieces. I guess the plastic had become old and brittle enough that the extra force of the spring being overloaded made it explode.

And customers wonder why ski shops won't touch old bindings without a waiver.

So i opened up the toes on an axial 10 and 12. The spring on the 12 was a little bit bigger but wasnt longer then the 10. Also there was one washer in the 12. The window/din numbers looks like a pain in the ass to try an switch with out cracking it. The din meter on the other hand slides out like a little chip so its easy to switch. THis means you will have the bars for each din level but the old numbers are still there. so just ignore the numbers and go by the bars.. ha
  Also if youve broken a wing off on a toe(like me) you can switch that if you have an extra toe. the wings connect to a bolt that runs through the middle of the spring and then goes into what you use to tighten down the din.  NExt up is the heels, i hope they are as easy to work with as the toes but i have a feeling they are not.

Ive been looking for that thread thats a guide w/ pics to taking apart your binding and cleaning them but i cant find it. If anyone got the link ++++Karma.
