The universe is not infinite, and if each of our neurons were a universe for like... molecules, it would not be infinite, just incomprehensibly large. And I agree, I have often thought about how our universe could be the equivalent of a cell for an even larger organism.
Hubble's Constant states a body's recession speed at a given distance from us (approximately). Therefore, we can get an educated guess at distances by measuring a star/galaxy/whatever's redshift.
