They are stiff enough so they can handle stuff outside the park, including speed. The skis are symmetrical. You can mount them true center, but people have found more responsive turning when you mount 1 cm back from center.
And, yeah, I'd say you should go with the 181. I'm 5'6 riding 171's.

in no way is that the right size for you bud, but if NS has convinced you that longer=steezier and therefore you NEED THEM then go ahead...

If you're not going to grow anymore 181 will be a bit long, about an inch taller than you.
