What size ski?

Im 5 8, 140 lbs and i ski mostly the 'ice coast' in OH. I take several trips a year (New York, PC, Quebec) and im looking for a good all mountain ski. I handle my 180 ar5's very well everywhere, but i want something with a little more girth. I think ive narrowed it down to:
ARV
Seths

My delima is what size to get. Should i go above 180cm, or should i stick around 180?

^^ie 185 arv's and 189 seths, or 175/179?

the arv's and seth's seem like two really different skis, the arv's are soo soft, and from what ive heard the seths are stiff

Don't worry, the Seths are noodles too.  I'd say for skiing anywhere on the east the 189 Seths would be totall overkill.  I have 189 Pistols and they can be a bitch to get around sometimes when I get into a really tight spot and I'm 6' 160 lbs.  It's not that they're a hard ski to ride at all, it's just the length that can get in the way from time to time.
