is it possible to take the "lifter" off the looks

Yes, simply ask your ski tech nicely to mount these without the lifter and they will proceed to find shorter screws and mount them like a champ.

some people say yes, but a 6.5mm rise is almost undetectable

Lifts your boot a bit higher off the ski, allowing you to put more leverage onto the edge, thus carve turns easier. Prevents booting out when turning, etc... You can go on and on with what they do, but long story short makes carving easier.
