ive never been to a sports chalet or know anyone who has had bingings mounted at one but with all the recent binding mounting problem threads my advice to you is:
1) measure and mark exactly where you want the mounting point. ex. if you want true center, grab a measuring tape and a sharpie and measure out the true center of the ski and put a little mark on the topsheet there.
2) be clear when explaining how you would like your bindings mounted. dont just say true center and leave. show the people where you have marked and make sure they understand.
3) if possible ask to speak with the tech who will be doing the mounting. make sure they know exactly what you want and how you want it done.
4) a case of beer for the shop tech never hurt anybody
really these things should apply for any place you would get your skis mounted at because even experienced shops can still screw up due to miscommunication or just not understanding what you really want.

this is good advice. i used to work at sport chalet and the majority of people there are clueless...
if you're within a reasonable distance, drive to the origional one in la canada. the ski tech there knows his shit. he's the only person i trust with mounting my skis.
