OK here are a few tips.
-Don't try to look through the lens when you're moving
-Keep it as steady as you can (A given)
-Get a fisheye (not wide angle) so you have a better chance to get the person in the shot
-If you really want to get into it build (or buy) a handheld steady cam
Wide angles are made for viewing a wider picture. Yes they are similar but the fisheye will pull the center of the picture closer thus making the shot much sicker.
Fish eyes are wider then a wide lense,you have a better chance of getting the person in with a fish eye.Use a fisheye for following and if ur camera doesnt have a handle then make one.

I prefer to use a wideangle. still allows you to get the skier in the shot without distorting everything too much.
also like people above have said dont try to look through the eyepiece, even looking at the LCD causes you to try and overcompensate too much and results in a shaky shot. practice just holding the camera low with your arm lose (1 hand not 2) and follow the person adjusting mostly your hand and not your arm. This technique I find works best for higher speed follows into jumps and such. if you are doing follows on rails at slower speeds you can use the viewfinder to lineup the shots a little better
just go out and try some follow cams, review your footage and see what you did wrong, go back and try again. and you don't need a fisheye or wide angle lens, it just makes it easier, i prefer not to use one
no no no. Dont use 2 hands it throws ur body off and every single little bump you hit will show becuase you cant use your other hand to balance anything out. Dont use viewfinder, just practice follow cams. It all comes with practice. Just always look ahead cuase your day will be ruined the second you fall with your cam. I fell with my GL1 and "destroyed" doesnt even begin to describe it.
deffinately played out. seems as tho most movie posted here are ALL fish eye lenses the whole time. these people need to learn when to use it and when to not
