Dude, go to Cimone, it's not THAT far away (i would guess 3 hrs) - just southwest from Bologna in the appinnees and they have a great park. Plus, I know a guy on the park staff too and he's pretty solid. It's also in the right region for the best food in Italy.

Val Gardena and Val di fassa are your best bets for a truly Italian skiing experience... (Canazei!) with something like 600 sq km of skiiable terrain covered by one pass that costs 30 euro, you can't go wrong. Plus it's never cloudy, scenery is gorgeous and the food is to die for... it's a long way from Rome though.
