Replying to MP3 cd's on iTunes

So I've been making MP3 cd's on iTunes for a while now. I knew on other programs you can make MP3 cd's and also include folders to organize the music on the cd. I've never been able to figure out how to do this on iTunes however last night i made a cd for my car and when i went to listen to it there were 7 different folders.

Retracing my steps I can't find anything that I did differently this time compared to all other times. Sooooo somebody help me out here how do I create these nifty folders on my MP3 cd using iTunes?
