technically you don't need any. but how ever much you have or can afford would work. Like 6 feet maybe to land on. place it like 2 feet from the end of the rail.

who needs a landing, unless you really care about your skis just land on whatever is off the end of the rail

the landing needs to be slick enough so you can continue going after your off the rails, like switch

if you were really good you could hit it with just enough speed so you stopped at the end of the rail. that would save you money also

just put water on the landing, unless if youre going real fast, then you might need a carpet, 7 or 6 feet maybe
