I've heard paople say that a 5 degree base bevel and 5 degree side bevel underfoot is good - this would give you a sharp but bevelled edge, so it makes sense. I wouldn't want to ski 5 degree base bevel on my whole ski though - a regular 1/1 or 1/2 outside the bindings would be good, but blending the two would be hard to get right. A shop would probably have to do this by hand which would cost you a lot. My shop even charges extra for specific angles on machine grinds. I'll ask the techs what they think about the idea tomorrow.
