moment ruby would be an awesome touring ski.
either in a 188 or 190
188 if you want a softer, playful ski. 190 if you want more of a stiff charger.
Both are light and fun though.
try and get next years s7 in 195
it has a layer of metal underfoot so its ridiculously stable at speed but still simple to pivot with the rocker/ soft tips and tails

You want groomer performance, and you want to charge. and ski pow great, and tour well. Either would be great. For easier touring, get the Bibby since it's going to be noticably lighter(195 S7 is about 12lbs/pair). JJs are way too damn turny on groomers and won't charge like a directional ski(S7s and Bibbys can ski switch though) and you want a ski mounted back a bit for charging for sure(and touring). Both of these have some camber and a large rocker, and are 11_ underfoot(117ish both) and have great reviews already for being super versatile. Do it!

If your gonna tour hard to beet the weight savings of a carbon fiber ski. Pm gear Lhasa pow @ a 112 waist is a perfect all mountain slayer available in a 186 191 and 196 length. DPS skis aren't cheap but kill it too. There is no 110 wailer 105's or the lotus 120 the option of different flexes are nice.
Binders there is a guy over on tgr making a plate that allows for the swapping of a dynafit binding and a duke/baron. Which gives you the best of both worlds the lightweight options for real touring where dragging a +5lb binder uphill is stupid, and the ability to mount a good 16 din rip it up in the resort/ sidecountry where dynafiddles are not ideal

I'm not saying side /slackcountry isn't "real" touring just once you reach a point for me ~4,000' Dragging a duke or an other binding up that many steps when there is a bomber solid stiff binding that weighs 1/2 is stupid. Sure I know you can't huck big on em but once your 4 or 5 hours in to the wilderness huckin big aint real wise.
Once you start into the ski mountaineiring aspect of touring the amount of gear you need to put on your back. Ropes, harnesses, cooking supplies bivy materials etc to do it safely makes putting weight on your feet undesireable. Light is right
