put on the boots and then put on your skis then adjust the canting while youre in them to see how it all feels

How much/easy your shins can move forward and back. If you set it really loose you can touch your knees to the ground and really tight you can't move them at all.

Canting is the amount of ankle angle away from 90-degrees...the more cant the more torque placed on the edge of the inside ski....outward canting helps increase perfrance by helping you tansmit power to the edges...some people also need it to even out your two legs which may have different angles and cause awkward edge pressuring or pain...
canting if done by a pro-boot fitter can be awsome, muost skiers are not good enough to notice however

The adjustments on the side of boots are confused with canting. Those are cuff alignment adjustments, which accounts for the lateral lower leg angle, often when the skier is bow-legged or knock-kneed. Canting is the ajustment of the lateral angle the boot sits at. Often done by grinding the boot sole or mountain shims under the binding. My shop is using a system called SBS now which measures your angle you best balance at then install shims under the liner to compensate. Some of the staff say they're pretty dubious over whether it's worth paying for it for the slight improvements it makes, but if you have serious problems it will solve them.
